Jenny Cumanda Carchi Lopez Vargas, 70, passed away at home on the evening of Friday, June 9, 2023. She was surrounded by her loving husband Jose Vargas and brother Jorge Carchi.
Jenny was born on May 24, 1953 to Olga Lucila Lopez and Jose G. Carchi in Daule, Ecuador. She came to New York in the late 80s, and made a life in Queens with her family. She was one of the most loving, kind individuals who cared about everyone. Her sweet smile would make anyone that encountered her feel at home and she brought joy wherever she went. One of the ways she showed her love was through the food she shared. Some of her most beloved dishes include flan, pescado frito, ceviche, cazuela, costillas, seco de gallina, and her wonderful Thanksgiving turkey. Jenny was also very talented at cutting and styling hair and would provide haircuts to family and friends. She loved to give manicures and paint nails.
She is survived by her husband, Jose, daughters Jenny and Diana, siblings Jorge Carchi, Carmen Rivera, and Milton Carchi, and grandchildren Kelvin and Kayla Fonseca. She leaves behind a huge family and friends that loved her immensely and will miss her forever.
